Cookie Craving

Yesterday was quite the challenging day, and a little treat-making time was just right to top it off.  When you need to whip up a fast batch of cookies, these are the perfect answer.  Whether you are charged with serving dessert at a last minute dinner, need some quick baking time as a pick-me-up, or have to quickly satisfy a sweet tooth with a home-baked good, these cookies go from mere ingredients to total tastiness in a matter of about 20 minutes.  Plus, you don't even have to wait for the oven to preheat!  Because there are no eggs in this recipe, there is no need to worry about sneaking some 'cookie dough' while you make these- just be sure to let the mixture cool before you enjoy a bite!  Don't let the humble appearance of these cookies deceive you- they are soft, chewy, chocolaty, and a perfect companion to a nice glass of cold milk.  I will enjoy pulling these out of my cookie jar (seen here) when I need a treat this week.  When you want to try these out, the recipe is as follows (but beware, these are in no way lo-cal or healthy!):

No-Bake Cookies
4 Tbsp. butter
2 cups sugar
1/4 cup cocoa powder
1/2 cup milk
1/2 cup peanut butter
3 cups quick coking oats
1/2 Tbsp. vanilla

Add butter, sugar, cocoa powder, and milk to a pan; mix together and bring to a boil.  Boil 1 minute, stirring constantly, and remove from heat.  Add peanut butter, oats, and vanilla; mix until well blended.  Drop by spoonfuls on to wax paper and allow to cool.  Enjoy!
